Ingrediants:

  • 2 cups almond flour
  • 1.5 teaspoon baking powder
  • 3 Tablespoons Coconut sugar (or Raw sugar)
  • 6 large eggs
  • 3 Tablespoons nut butter
  • 3 Tablespoons tapioca flour
  • 1.5 Tablespoon melted butter
  • 1.5 teaspoon vanilla extract
  • 0.5 cup greek yogurt
  • 0.8 teaspoon cinnamon
  • 0.8 teaspoon salt

Method:  

  1. Get your waffle maker ready: Activate your waffle maker and allow it to heat for about 5 to 10 minutes, until it reaches a temperature where a droplet of water instantly evaporates upon contact. Simultaneously, preheat the oven to 250°F.
  2. Prepare the waffle mix: In a medium-sized bowl, combine all the dry ingredients. In a different bowl, mix all the wet ingredients. Then, pour the wet mixture into the bowl with the dry ingredients and whisk them together until well combined.

  3. Let the batter sit: Give the batter a rest for about 5 minutes, which allows the flour to soak up the liquid.
  4. Cook the waffles: Apply a layer of grease to the waffle maker and follow the manufacturer’s guidelines to cook the waffles. Once cooked, keep the waffles in the preheated oven for around 5 to 10 minutes. This will keep them warm and add a bit of crispiness. Serve with fresh fruit and maple syrup!
