Ingrediants:
- 2 cups almond flour
- 1.5 teaspoon baking powder
- 3 Tablespoons Coconut sugar (or Raw sugar)
- 6 large eggs
- 3 Tablespoons nut butter
- 3 Tablespoons tapioca flour
- 1.5 Tablespoon melted butter
- 1.5 teaspoon vanilla extract
- 0.5 cup greek yogurt
- 0.8 teaspoon cinnamon
- 0.8 teaspoon salt
Method:
- Get your waffle maker ready: Activate your waffle maker and allow it to heat for about 5 to 10 minutes, until it reaches a temperature where a droplet of water instantly evaporates upon contact. Simultaneously, preheat the oven to 250°F.
- Prepare the waffle mix: In a medium-sized bowl, combine all the dry ingredients. In a different bowl, mix all the wet ingredients. Then, pour the wet mixture into the bowl with the dry ingredients and whisk them together until well combined.
- Let the batter sit: Give the batter a rest for about 5 minutes, which allows the flour to soak up the liquid.
- Cook the waffles: Apply a layer of grease to the waffle maker and follow the manufacturer’s guidelines to cook the waffles. Once cooked, keep the waffles in the preheated oven for around 5 to 10 minutes. This will keep them warm and add a bit of crispiness. Serve with fresh fruit and maple syrup!
